The Gyros Pita is by far the most popular takeaway food in Greece and costs between 2 and 3 euros. You really should try one on your holiday. Gyros means "spin" in Greek (as in gyroscope) and like the classic doner kebab, the meat is cooked rotating continuously on a vertical grill, with the cooked outer layers being shaved off while the rest of the meat is left to cook almost like on a barbeque. Gyros meat is usually made from pork or chicken, but can be made with lamb or beef. The meat is marinated with lemon juice, olive oil and herbs such as thyme, rosemary, and oregano. A typical Gyros Pita Wrap is served along with chips, tomato, red onion and tzatziki in a rolled up fried pita bread, but can be served on a plate with the pita open or cut into pieces on the side. Grab a couple of paper napkins too as it can get messy!
